Love the cappuccino meringues. A couple of observations from this long-time baker. Cream of tartar should be added at the start of beating whites as it helps to stabilize and increase volume. Secondly, while grease is bad for beating whites, a drop of water will have no deleterious effect. I wipe my bowl with paper towel dampened with cider vinegar before mixing to ensure no grease remains.
