Do you constantly find that you have bits and pieces of leftover cheeses in your cheese drawer? You had friends over and sampled some cheeses with wine. You wrapped up what was left of your 2 year aged white cheddar but now you don’t know what to do with those lonely pieces. sigh. . . not to mention the left over slice of provolone, and the loner tab of goat cheese. . . Well. . .Try This! Fromage Fort is an amazing way to make great use out of all your leftover cheeses! It’s also a great go to when you need something quick to whip up before company arrives. Fromage Fort is a forgiving friend. You can use any leftover cheeses you wish. Pair that with wine, a few tabs of butter, and some seasonings in a food processor. You’ve now have a delicious and wonderful spread for baguettes, crackers, veggies, pretzels, or even summer sausage.
The recipe here is very customizable. Use different cheeses and seasonings! Play around, have fun, and be creative. You could even use red wine for a port red color and flavor! Wouldn’t that be beautiful on a canapĂ©! Today I used gouda, white cheddar, parmesan, and goat cheese. I had some Peach flavored mead available, and it paired well.

Fromage Fort Recipe

Ingredients:
  • 1 lb of any assortment of cheeses, room temperature (remove the rinds from harder cheeses and grate, softer cheeses cut into cubes)
  • 1/4 cup wine (I used Oliver Peach Mead)
  • 2 Tbsp Unsalted Butter, room temperature
  • 1/4 tsp minced Garlic
  • 1/4 tsp dried Basil (or pick seasonings that compliment your cheeses
  • 1/2 tsp Honey Habanero Mustard fromDillman Farms (optional, or other mustards depending on cheese varieties)
  • Salt and pepper to taste. (if using saltier cheeses, be careful not to over-season)
Directions: 
  1. Place the prepared cheeses, wine, butter, basil or seasonings, garlic and mustard in a food processor.
  2. Process until desired consistency. Process longer for a smoother spread (I prefer it smooth), about 2 minutes.
  3. season to taste
  4. serve immediately or refrigerate it to thicken the spread. It can be stored in the refrigerator for 1 week.
  5. Serve with veggies, crackers, breads, meats, whatever your heart’s  desire! I really love serving it with vegetable chips. The vibrant colors serve for a very nice presentation.
