I had to take a dreadful trip to the dentist yesterday. The past few days I had been psyching myself up for the visit, but I still arrived yesterday morning as terrified as ever. I’ve had some very horrifying experiences with dental appointments throughout my life. One specific dentist at the age of 12 scared into a dental complex. The office even reminded me of a musty old torture chamber. At least that’s what I recall. I imagine the actual experience has been embellished over the years, my creative brain making the whole ordeal seem much more horrible than it probably was.

But hey, being in a traumatizing situation is just that… traumatizing. I went in yesterday with the anticipation of a root canal, and I was just as horrified as when I had to have my hand stitched shut last year (in result of a cake carving project gone horribly wrong). After 45 minutes in the chair the wonderful Dr. told me he was able to work off of what was left of the tooth, and a root canal wasn’t necessary meaning a large filling would suffice. YAY FOR ME! What was scheduled to be a 3 hour appointment was only 1 hour, and an eighth of the price. Happy Day!

I’m super stoked that I didn’t have to face the root canal, however my mouth is on the sore side from all the drilling so I opted for a celebratory sandwich that is reminiscent of a childhood favorite, while still being easy on the molars. I’m as giddy as a kid right now, so it seems all too appropriate.

Grilled Peanut Butter and Jelly is the best and it really made my already wonderful day, so much better. Pan grilling a PB&J makes an average lunch into something spectacular. I love playing with different preserves and nut butters to make it a more “sophisticated” version of this great sammy, at least that is what I tell my inner child.

I used my Blueberry Vanilla Jam on this gooey greatness. Grab a glass of milk and turn on the cartoons, it’s “Peanut Butter Jelly time!” You can get my Blueberry Vanilla Jam recipe over at TheItMom.com.

Yields: makes 1 Sandwich

Ingredients
  • 2 Tbsp Blueberry Vanilla Jam (or jam of your choice)
  • 2 Tbsp Peanut Butter
  • 2 thick slices of french bread
  • 1 tsp butter
Instructions
  1. Spread the jam on one slice of the french bread and the peanut butter on the other
  2. Sandwich the two slices together, and spread the butter on both sides of the sandwich.
  3. Grill in a pan over medium-high heat until toasted and golden on both sides , Approx. 2 minutes per side.
  4. Top with a few banana slices and a toothpick
  5. Enjoy with a giant glass of milk.
